You have to make sure that you have enough space for your food. In addition, you should also have enough room for your equipment and other stuff that you will most likely bring with you. The best thing you could to to avoid stress is plan your menu ahead of time. The holidays is the season when everyone is busy. It's all about having the time to make your best recipe for your customers to fully enjoy during the holidays. Make sure that during the year, you experience with new dishes and desserts that you have never tried before. Let your team, friends and family try it out. Use their feedback to better your recipe.
